Prepare the Vegetables

Wash and slice the bell peppers into thin strips. Peel and julienne the carrots. Chop the green onions, separating the white and green parts. Mince the garlic and ginger.

Bring a large pot of salted water to boil. Add the noodles and cook according to package directions until al dente. Drain and rinse with cold water to stop the cooking process.
